Fourth of July Feast

We ate our holiday lunch yesterday because I have to work today. I thought I'd share our meal! The Fourth of July really makes me think of summery, picnic foods, and that is what I prepared.

My baked beans: I add brown mustard and brown sugar to the beans. I brown bacon and chopped onions, and sprinkle the mixture over the top of the beans. I add some more brown sugar and bake covered at 350 for about a half hour. These aren't very low calorie, but boy are they tasty! 

 
I also made macaroni salad and pasta salad. 
 
I made hot dogs on the grill and warmed up the buns too :) I love the grill marks!

For dessert, we had S'mores Bars. YUMMY! One of my coworkers brought a batch into work, and they were so good that I had to give them a try. It is a Paula Deen recipe, and I actually have it to share :) I used the marshmallow fluff, but if you can find the flat marshmallows for s'mores, I'd just use those instead. The fluff made it hard to spread the top dough on, and then baked up the sides. I think the flat marshmallows would just melt down into the chocolate.

Ingredients
  1. 1/2 cup butter, softened
  2. 3/4 cup sugar
  3. 1 large egg
  4. 1 teaspoon vanilla extract
  5. 1 1/3 cups all-purpose flour
  6. 3/4 cup graham cracker crumbs (about 6 sheets of graham crackers)
  7. 1 teaspoon baking powder
  8. 1/4 teaspoon salt
  9. 4 (1.5-ounce) Hershey’s Milk Chocolate Bars
  10. 1 cup marshmallow crème

Instructions
  1. Preheat oven to 350°F. Lightly grease an 8-inch baking pan.
  2. In a large bowl, beat butter and sugar with an electric mixer until creamy. Add eggs and vanilla; beat until combined.
  3. In a small bowl, combine flour, graham cracker crumbs, baking powder, and salt. Add to butter mixture, and beat until combined. Press 1/2 of dough in the pan, spreading evenly. Lay chocolate bars on top of dough, breaking apart as needed to create an even layer of chocolate. Spread marshmallow cream over chocolate bars.
  4. Spread remaining dough over marshmallow cream and chocolate bars. Bake 30 to 35 minutes.

Makes 2 dozen bars
